At Achaar Gali, we’re passionate about delivering the taste of home in all our pickles. Our pickles are handcrafted using generations-old recipes passed down through our families. We use sundrying and slow fermentation processes that allow the fresh, seasonal ingredients to develop rich, indepth flavor unlike any store bought pickle. Each bite variety is made with vibrant spices, enticing aromas, and the comforting taste of nostalgia – the taste we have cherished since our childhoods by our grandmothers!

We believe the best flavors come from directly from the farms. That's why we source our ingredients directly from local farms, ensuring peak freshness and use of seasonal produce in our pickles.

Sun-drying

Our pickles are sun-dried naturally in our huge farms over a period of 20-30 days depending on the pickle variety, slowly concentrating their delicious flavors and the spices. This traditional method also eliminates the need for artificial preservatives.

Hand-Ground Spices

We use only the finest whole spices, hand-ground in small batches to enhance their full aromatic potential. This ensures a depth of flavor unmatched by market ready mass ground spices.

Preservative-Free Recipes

At Achaar Gali, we believe in letting the quality of our ingredients shine. We never use artificial preservatives or additives, ensuring a pure and authentic taste experience.

Cold-Pressed Kacchi Ghani Oil

We use only pure, cold-pressed kacchi ghani oil for a healthier and more flavorful base. This traditional extraction method preserves the natural goodness of the oil, enhancing the overall taste of our pickles.

Washing and Preparation

Once we receive fresh produce from local farms, we thoroughly clean and dice it depending on the pickle variety

Sun-Drying

The prepared ingredients are then spread out under the warm sun. This natural drying process removes excess moisture, intensifies flavors, and helps preserve the pickles. Pickles like aam ka achaar are marinated with haldi & mirch as haldi as antibacterial properties.

Spicing it Up

We mix the prepped and dried pickles with our signature spice blends. Hand-ground spices are combined according to traditional recipes, creating unbeatable taste and flavour profiles.

Small Batch Pickles

Our pickles are not mass produced. Each batch is made with care and attention to detail, following the time-honored traditions passed down through generations. This dedication to quality ensures that every jar of Achaar Gali delivers a taste of homemade goodness which is unique and can be only made once.

Aging to perfection

Patience is key! Our pickles are carefully aged under the sun for 2-30 days and then under controlled conditions to allow the pickling process to work. This results in a depth of flavor and a delightful taste that defines Achaar Gali pickles.

Marination Magic

The sun-dried ingredients are then mixed with high-quality cold-pressed kacchi ghani oil or freshly squeezed lemon juice as per the pickle variety. This allows the flavors to meld and infuse the pickles over time.
